In a food processor or blender, place the bananas, sugar, a small stream of vinegar and a teaspoon of mustard. Season with salt and pepper and blend until creamy.

Heat oven to 350°f .
Wash and dry the chicken. Season with salt and pepper, rub with oil and bake ten minutes. Turn and bake another ten minutes. Baste with lemon juice and any juices in the pan, adding more oil if necessary.

Now is the time to enjoy a cool glass of rosé.

When the chicken is almost done, cover with the platano sauce. Bake for a few more minutes.

Serve on a pretty platter decorated with thin slices of tomatoes and baked ham.
